Taste:
Tie yourself up and wait for the oily black smoke with a rich, heavy, peaty mouthfeel. Then comes a sweet, sticky taste of grilled banana (yes, really), tangy sultanas and dried fruit. I told you he's different.

finish:
The peat returns, just as you hoped/feared. This time he's brought an authentic Spanish sherry oak, pleasing and disturbingly sweet. And one last sharp, salty reminder that we're not dealing with the ordinary here.
