Tasting Notes:

Nose: Malty, ripe pears, raisins, floral, lemons, warm vanilla cream, pink lady apples, marzipan.

Taste: Fruity, honey, caramel, malty biscuits, a hint of spicy spice, toffee popcorn, lemon cake.

Finish: Long-lasting oiliness with a spicy sharpness that finishes off dry.

"Today I bought a distillery - it's good to be back," announced Mark Reynier in a 2014 tweet. Six years later, his Waterford distillery enriches the whiskey world with distillates that are the result of the radical realization of terroir . In accordance with the principle known from the world of winegrowing, the Irish barley for Waterford is grown, stored, malted and distilled separately. Because: terroir, that is the realization that soil composition, solar radiation or location lead to clear differences - not only in the barley itself, but also in the aroma of single malts.

Each bottling of Waterford explores a location in Ireland's key barley growing region, where the distillery is located. Terroir by terroir, the exclusive "Single Farm Origins" tastefully reflect their place of origin. To this end, Reynier and Co. are currently working with 72 farms. For example Ballykilcavan and Bannow Island, whose barley thrives on the one hand protected by picturesque old-growth forests and on the other hand is exposed to salty Atlantic winds on the coast. Ballykilcavan Edition 1.1 and Bannow Island Edition 1.1, Waterford's pioneering spirits, sold out very quickly due to high demand. Now the distillery is following up with new editions of the two completely different terroirs. Ballykilcavan Edition 1.2 and Bannow Island Edition 1.2 are as individual and complex as their predecessors. Also limited, they differ in the composition of the barrels and the slightly longer aging time.

They are complemented by two more single farm bottlings. Sheestown barley in County Kilkenny grows on a hilly terroir of well-drained clay soil. It is the basis of distillation for Waterford's honeyed-spicy Sheestown Edition 1.1 . In the rain shadow of the Wicklow Mountains, Robert Milne's fifth generation family farms the fertile fields whose barley was distilled in 2016 into the fruity and sparkling Ballymorgan Edition 1.1 . The whiskeys are 50% vol. as well as in natural form without colourings, chill filtration or additives.
