Highland Park zählt zu den feinsten Single Malts Schottlands. Duncan Taylor ließ den für fleischige Umaminoten gefeierten Insulaner zunächst 14 Jahre lang in Eichenfässern reifen. Für fünf Monate intensiver Nachreifung füllte man den Highland Park 2007/2022 in ein Oloroso Sherry Octave Cask um. Bei fassstarken 55,3% vol. entfaltet er neben Honig-, Orangen- und Teearomen in der Nase Anklänge von Sherry am Gaumen sowie Noten von Milchschokolade und gepfeffertem Steak.
